Cheesecake with Strawberries
The bouquet that makes up the scent of spring must contain a hint of strawberry, a fruit that attracts not only for its color , but also , and above all, for its unmistakable aroma .
And then we have fun looking for new and unusual ways to present it on our tables. For this occasion I decided to use strawberries as the main ingredient of a cheesecake that is not exactly traditional, but certainly very appetizing.
A cheesecake with strawberries baked in the oven and that involves the use of the ricotta (cottage) cheese instead of more trational cheeses used to prepare chessecackes, that have a higher acidity , since in this case the sour note is already given by the strawberry.

- 1 roll of round puff pastry
- 500 grams (17.64 oz) of ricotta cheese
- 200 grams (7.05 oz) of sugar
- 2 whole eggs
- 500 grams (17.64 oz) of strawberries
- powdered sugar as required
Preparation:
Sieve the ricotta cheese and add it to the sugar and eggs .
Beat the mixture well with the mixer until it becomes puffy and fluffy .
Wash the strawberries, keep aside 6/7 pieces to decorate your cheesecake, and chop the other ones: then add them to the mixture of ricotta sugar and eggs, stirring gently .

Cover a baking mold with the pastry ( I always leave the parchment paper in which the pastry is packed to ease its removal from the baking tray). Choose a mold of a size that allows the puff pastry to cover not only the bottom but also the walls of the mold, with a border of at least 4 cm .
Pour the mixture of ricotta and strawberries on the pastry and bake at 180° C (350° F) for 20 /25 minutes .
When the cheesecake is cooked, remove it from oven and let cool.
Then decorate it as you like with the remaining strawberries and the powdered sugar.
