Swordfish with Mediterranean Sauce



The swordfish with mediterranean sauce is a quick and easy recipe that allows us to  cook at the best a tasty fish  as swordfish is.
The  bouquet of aromas we use in the recipe, helps to reduce the strong taste of the fish with a burst of  tipically Mediterranean flavours.
Even cooking is very fast, so that is a clever recipe to solve in a satisfactory manner even an unexpected dinner with friends little effort and great taste !

Ingredients for 4 people

  • 2 slices of swordfish (if they are small, take at least 4)
  • 2 ripe tomatoes
  • 1 spring onion
  • fresh herbs (chives , oregano , basil) to taste
  • 20 black olives (such as Kalamata or Gaeta )
  • 6 tablespoons extra virgin olive oil
  • ½ cup of dry white wine ( Vermentino )
  • salt as required

Preparation:

Wash the tomatoes and blanch in boiling water for a few minutes.
Then dive them into cold water and peel .
Remove the seeds and the vegetation water, then cut the tomatoes into strips or cubes.
In a large skillet saute the spring onion in the oil and add the tomatoes .
Add salt and simmer with the lid on medium heat.
When the sauce is almost ready, pour the white wine and let the alcohol evaporate, add the olives and then the swordfish .

Cook for 10 minutes, then cover the fish with the spices, turn it upside down and cook for another 5 minutes .

If you like you can add a sprinkle of olive oil and serve hot.

A suggestion for a complete dish is to serve the swordfish with mediterranean sauce with boiled white rice that you shall season with the sauce of the fish.
